This week I was hoping to go on a big grocery store and and bakery shop to gather gluten free bread, pasta, baking ingredients and basic snacks however, my schedule did not permit! Lucky for me, my mom avoids most gluten products in her diet so I had a few options for food. That being, said I felt that the food I consumed was much more thought out and energy consuming to prepare. In moments I would normally quickly snack on crackers or toast or a convenient pre-made baked good, I had to scavenge my kitchen for a tasty and satisfying snack. These moments either forced me to spend time preparing a personal charcuterie platter with cheese, nuts, fruit, rice crackers or veggies and dip or I would be left hungry. Overall, not being able to grab convenient, maybe “unhealthy” snacks forced me to eat whole, healthy and filling foods and spend a bit more time thinking about the food I’m putting in my body.

This week, I didn’t buy any snacks or treats on campus because there were simply no appetizing gluten free options! Although this week I ended up spending less money on eating out and buying snacks, I was not satisfied with he amount of food I had. My goal for the weeks moving forward is to better prepare snacks and meals for the week as well as buy some convenient snacks I can grab on the go!
